
Gluten Free Chocolate Chip Cookies
Ingredients:
2 cups almond flour or 1-1/2 cups almond flour and ½ cup coconut flour, your choice
½ tsp baking soda
Dash slat
Dash cinnamon
½ cup chocolate chips
¼ cup maple syrup
¼ cup coconut oil, melted
1 tsp apple cider vinegar
2 tsp vanilla extract
Instructions:
- Heat oven to 350 degrees
- Line a baking sheet with parchment paper.
- In a medium bowl whisk together the almond flour, salt and baking soda.
- Once mixed add the melted coconut oil, maple syrup and vanilla extract and stir.
- Fold in chocolate chips.
- Drop rounded tablespoon of batter onto baking sheet. Flatten and shape cookies to size you prefer as they will NOT spread out when baked.
- Bake for 15-20 minutes, start checking at 15 minutes for lightly golden edges. The longer they bake, the crispier they become.
- Remove from oven and cool on cookie rack.
Cookies can be frozen or refrigerated.
NOTE: It can be challenging to make good gluten free cookies so experiment until you find the combination you prefer.
