Gluten Free Chocolate Chip Cookies
Eating gluten free doesn't mean giving up every delicious treat. Here is a great recipe for gluten-free chocolate chip cookies.

Gluten Free Chocolate Chip Cookies

Ingredients:

2 cups almond flour or 1-1/2 cups almond flour and ½ cup coconut flour, your choice

½ tsp baking soda

Dash slat

Dash cinnamon

½ cup chocolate chips

¼ cup maple syrup

¼ cup coconut oil, melted

1 tsp apple cider vinegar

2 tsp vanilla extract

Instructions:

  1. Heat oven to 350 degrees
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl whisk together the almond flour, salt and baking soda.
  4. Once mixed add the melted coconut oil, maple syrup and vanilla extract and stir.
  5. Fold in chocolate chips.
  6. Drop rounded tablespoon of batter onto baking sheet. Flatten and shape cookies to size you prefer as they will NOT spread out when baked.
  7. Bake for 15-20 minutes, start checking at 15 minutes for lightly golden edges. The longer they bake, the crispier they become.
  8. Remove from oven and cool on cookie rack.

Cookies can be frozen or refrigerated.

NOTE: It can be challenging to make good gluten free cookies so experiment until you find the combination you prefer.
